This recipe, Raspberry Nougat Parfait, is a favourite family recipe and is a popular request for when we have family special family gatherings – Paul.

Raspberry Nougat Parfait

  • 2 cups of ricotta cheese
  • 300ml cream
  • 3/4 cup caster sugar
  • 150g nougat, chopped
  • 1/4 cup almond kernels, toasted and chopped
  • 1 cup frozen raspberries


  1. Blend ricotta and caster sugar until smooth
  2. Beat cream until soft peaks form
  3. Combine ricotta mix, nuts, and nougat into a large bowl
  4. Fold in cream, then fold in raspberries
  5. Spoon into a lined loaf pan and cover with foil
  6. Freeze until firm
  7. Let soften before serving
  8. Serve with compote

Berry Compote

  • 2 1/2 cups raspberries
  • 1/4 cup caster sugar


  1. Combine raspberries and caster sugar in pan over low heat until berries are soft
  2. Push through sieve to separate and discard seeds
  3. Serve with parfait
